Carrots and Oranges


This recipe is inspired by, in my honest opinion, one of the best celebrity cooks out there – Jamie Oliver a.k.a. The Naked Chef.

Jamie’s recipes are great, because they are straightforward, simple and unpretentious. If you keep your kitchen stocked well with the basic products, such as herbs, spices, olive oil, different types of vinegar etc., these recipes never require much shopping, they are healthy and easy to make. I greatly recommend keeping Jamie in mind when looking for inspiration!



U need (serves 4)
500 grams of carrots (preferably long and thin ones)
A handful of parsley
1 orange
4-5 cloves of garlic (in their skins)
A pinch of cumin seeds
Butter
Sugar
Salt and Pepper

How to make it
Boil the carrots in salted boiling water with a tablespoon of sugar, a knob of butter and a little handful of parsley, tied up. Cut an orange into eighths and add them to the water, along with the whole garlic cloves in their skins and the cumin seeds.





As soon as the carrots are cooked, drain them, discard the herbs and throw them, along with the oranges and garlic, into a baking tray and roast them at 200°C for 10 minutes – this will give you a slightly meatier flavor.




Then mash up the carrots (all but one or two) with the oranges (take the skins off first) and the garlic squeezed out of its skin until you obtain a nice and smooth texture (you can use a blender if you want). Season with salt and pepper and add a little bit of butter.
I served this with strips of pork marinated in soy sauce with garlic and then fried with sesame seeds. As Jamie would say - lovely.
