Cinnamon Rolls

Who doesn’t love the smell of freshly baked goods early in the morning?! I sure do. These cinnamon rolls you can make the night before and bake the next morning. Perfect!

It is a nice idea for a family breakfast, for the holidays, or simply for a lazy Sunday morning. There is nothing more aromatic than the fresh smell of the rolls filling the air as they bake. And they look gorgeous.

U need (for about 15 rolls)
1 package of active dry yeast or about 10-15 grams of fresh yeast
1 cup of warm water (about 45 degrees C)
¼ cup of white sugar
¾ teaspoon of salt
1 egg, at room temperature
2 ½ cups of flour
¼ cup of butter, melted
1 tablespoon of ground cinnamon
½ cup of brown sugar

How to make it

In a small bowl, dissolve the yeast and 1 tablespoon of the white sugar in the water and leave for about 15 minutes (until a kind of foam starts forming on top).

In a large bowl, combine the yeast mixture with the rest of the white sugar, salt, egg and 1 cup of flour. Stir everything well to combine. Stir in the remaining flour, ½ cup at a time, beating well with each addition. When the dough has pulled together (if needed, add more flour), turn it out onto a lightly floured surface and knead until smooth and elastic, for about 8 minutes. Cover with a damp cloth and let rest for about 10 minutes.

Lightly grease a baking tray or cover it with a sheet of baking paper. Roll the dough out on a lightly floured surface to a ½ cm thick rectangle. Smear the dough with the melted butter and sprinkle with cinnamon and brown sugar (I mixed the cinnamon with the sugar first). Roll up the dough along the long edge until it forms a roll. Slice the roll into about 15 equal size pieces and place them on the tray with the cut side up. You can brush them with the melted butter, if you have any left.

Cover the tray with a plastic wrap and refrigerate overnight or cover and let rise at room temperature until doubled in volume, for about 45 minutes.
The next morning (or after 45 minutes), preheat the oven to 180 degrees C. Bake the rolls until golden brown, for about 15-20 minutes.
