Noodle Soup with Smoked Chicken, Leek and Peas

Chicken noodle soup is a homemade wonder cure for so many of us, it is nutritious, healthy, easy to digest and simply yummy.

This one is very easy and quick to make. So put away those instant noodles or cup-a-soups and start making your own, fresh and healthy soups! There really is nothing to it!
I used smoked chicken for two reasons. The main reason is the great way the intense flavor of smoked meat makes this soup really something else!
The other reason is simply the fact that once you buy smoked chicken breast, all you have to do with it is cut it up – no cleaning, boiling, baking, frying, spicing…love it!


U need (serves 4)
2 liters of chicken stock (from tablets)
150 grams of egg noodles
400 grams of leek, cut in rings
250 grams of peas (I used frozen peas)
300 grams of smoked chicken breast, sliced
2 tablespoons of soy sauce
Olive oil
Pepper
Naan bread (on the side)
How to make it
Fry the leek rings and the peas in a bit of olive oil for about 3 minutes. Add the stock and bring everything to a boil. Add the noodles and the sliced up chicken and let everything boil gently for about 5-7 minutes.
Season the soup with the soy sauce and some pepper.

Cut the naan bread into strips and serve on the side. I personally bought the naan in a restaurant, but you can of course make it yourself. There are plenty of recipes going around on the internet. Maybe I will try it myself one day…
