This pasta dish uses a basic
tomato sauce, which I have used in other recipes as well. Combined with the
baked ricotta that I have also made before, only with a slight twist to it this
time (I added sundried tomatoes to the mix).

Spinach & Ricotta Cannelloni

Baked Ricotta
This one makes a great lunch, as it is probably too light for most people to pass for dinner.
If you have never tried baking ricotta before, this is your chance and I suggest you grab it, because it is truly a little piece of heaven on earth! Especially if you are a fan of the Italian cuisine, the herbs, spices and aromas.

Baked Peas & Grilled Salmon
This is a fantastic recipe that is so quick and so simple and uses our reliable friends the frozen peas, which work really well here. Great with fish, meat, or even on a piece of nice ciabatta for lunch!

Baked Potato with Tuna-Ricotta Salad
Or as I like to call it – Spring Potato. I always make this dish as soon as I smell the spring in the air, which to me means that it is high time for lighter, fresh and more colorful food!
