Curry Tortillas


Perfect for lunch, as a snack or a starter. I realize there is nothing really innovative about this dish, it is ridiculously simple and easy to make, but it’s always an idea that maybe some people reading this haven’t thought of yet.
In addition, I will give you a nice serving tip for this one. It is always nice to have some original serving ideas, in case you have guests for example.


I don’t use real curry for this one, but curry powder. It is more common and so much easier to get. And the taste is great. You can season meat with the curry powder before preparing it, but you can also fry some onion, add some cream, a few spoons of curry powder and the result is a deliciously creamy and spicy sauce.
 
U need (serves 4)
6 medium-sized wrap tortillas
150 grams of smoked chicken breast, cut in thin strips or cubes
the juice of 1 lime
1 avocado, cut in cubes
a handful of fresh coriander
1 onion, finely chopped
1-2 tablespoons of curry powder
200 ml of cream
olive oil


How to make it                   
Fry the onion in a large frying pan with a small amount of olive oil for about 2-3 minutes. Add the smoked chicken and continue frying for a few minutes, while stirring. Add the cream and the curry powder. Mix everything well and let it simmer on a very low heat, stirring every now and then. Season with salt if necessary.

Meanwhile, mix the avocado cubes with the coriander and the lime juice.

Once the creamy curry sauce has reduced and thickened, switch the heat off. Heat up the tortillas according to the instructions on the package (usually a minute or so in the microwave). Scoop a spoonful of the chicken on top of a tortilla, in the middle. Add a spoonful of the avocado mix on top of that. Roll the tortillas up tightly. Use a sharp knife to cut them in half diagonally. A nice way to serve them is upright in small, preferably pretty, glasses.
