Zucchini Fritters

These easy Zucchini Fritters are a delicious way to make use of zucchini. They are tasty, quick and easy to make.

Zucchini Fritters are a fun and easy lunch, appetizer or light dinner recipe and are especially good when served with tomato sauce – this is my winter version of them.
But since spring is here (!!!), for a lighter and fresher version you can use a yoghurt sauce, like Tzatziki, or serve them with feta cheese and chopped fresh mint.


What’s in it (for about 20 fritters)
50 grams of flour (you can use more if you want)
1 egg
2 tablespoons of milk (if you use more flour, you will also need more milk)
1 zucchini, grated on the large holes of a box grater (about 300 grams)
salt and pepper
olive oil for frying

How to make it
Sift the flour into a bowl and mix with a pinch of salt, then whisk the eggs into the flour. Gradually pour in the milk and whisk everything around until smooth in texture. Stir in the grated zucchini. Season with freshly ground pepper.
Heat up 1 tablespoon of olive oil in a frying pan. Fry the fritters (each fritter is about 1 full tablespoon of batter) on one side for about 2-3 minutes. Once nice and golden brown, flip them over and fry for another 1-2 minutes. Keep frying as many batches until you have no batter left!
