Baked Peas & Grilled Salmon

This is a fantastic recipe that is so quick and so simple and uses our reliable friends the frozen peas, which work really well here. Great with fish, meat, or even on a piece of nice ciabatta for lunch!
These baked peas can be served both warm and cold.
Being a salmon fan, I served them with a nice piece of grilled salmon, which I first marinated in some soy sauce with garlic.

U need (serves 2-3)
400 grams of frozen peas
250 grams of ricotta
2 eggs
150 grams of freshly grated parmesan cheese
2 teaspoons of dried thyme
3 cloves of garlic, finely chopped
Salt & pepper
For the salmon:
2 or 3 salmon fillets
6-8 tablespoons of light soy sauce
2 cloves of garlic, pressed

How to make it                   
Crush the garlic in a garlic press and mix it with the soy sauce in a large bowl or deep plate. Clean the salmon fillets and place them in the marinade. Put it away in the fridge for at least an hour.

Preheat the oven to 180°C.
Put the peas in a sieve and pour boiling water over them.
Whisk the eggs, mix them with the ricotta, the grated parmesan, thyme and chopped garlic. Season with salt and pepper. Gently scoop the peas through the mix.
Take a baking tin and cover it with baking paper. Transfer the ricotta/peas mix to the baking tin en bake it for about 30 minutes. Put it under the grill for a few minutes for that nice, golden brown finishing touch.


When the peas are almost done, start grilling the fish for about a minute or two on each side.
