This one is a bit of a mix. An example of throwing together some ingredients I happened to have at home. It turned out quite good!
The main things that I will discuss here are the zucchini and the teriyaki sauce. I really don’t think I need to explain how to grill prawns or how to cook up some noodles (or do I?)
Anyway, back to the sauce. I know this is probably not the official way to make teriyaki sauce (probably not even close), but I love it and so does everyone who has tried it. And it simply resembles actual teriyaki sauce, so for the lack of a better name…
U need (serves 2-3)
For the “teriyaki” sauce:
200 ml of light soy sauce
about a cup of brown sugar
3 tablespoons of honey
A teaspoon of ginger powder
1 tea spoon of rice vinegar
For the zucchini:
2 medium-sized zucchini (in thin slices)
2 shallots, finely chopped
200 grams of feta cheese
A handful of basil leaves, roughly chopped
1 lemon (well cleaned)
2 cloves of garlic, finely chopped
2 tablespoons of roasted pine nuts
Olive oil
Salt and pepper
For the rest:
Some nice prawns (type and amount according to personal preference)
Soba noodles (or any other noodles, as much as you need/want)
How to make it
The “teriyaki” sauce:
Take a small pan and heat up the soya sauce on a very small flame. Add the sugar gradually and keep stirring (with a whisk) until the sugar has completely melted. Add the honey, the ginger and the rice vinegar and continue stirring. Let it boil very gently, stirring every now and then. When the sauce starts becoming thicker, turn off the heat and let it cool.
While grilling the prawns, you can pour some of the sauce over them for that extra nice color.
The zucchini:
You should start by roasting the pine nuts in a large frying pan (without any oil). Once nicely roasted, put them aside.
Heat up the olive oil in the same large frying pan. Fry the chopped shallots in it until golden brown (for about 2 minutes). Add the garlic and fry for another minute. Add the sliced zucchini, mix all the ingredients well and continue mixing every now and then while it all cooks for about 5-10 minutes, until the zucchini turn soft.
Meanwhile, rasp the yellow skin off the lemon and then squeeze the juice out.
Then crumble the feta cheese on top of the zucchini and keep everything on the heat for another minute (without stirring).
Turn off the heat and sprinkle everything with the lemon peel, the roasted pine nuts and the basil leaves. Mix everything carefully – not too much!
Season with the lemon juice, some salt and pepper.
These zucchini go well with the prawns, which go even better with the teriyaki sauce!
The (soba) noodles are for the really hungry ones…
