Spaghetti with Caramelized Onion

When I found this recipe I was immediately drawn to it, because it was something new, something I had not tried before. I would never have come up with this combo myself. But it is a great one!

And at the same so simple, yet delicious. The list of needed ingredients is pretty short and basic – just the way I like it. And the fresh thyme simply gives it that Italian smell, flavor and feel to it, which I love so much.



U need (for 2-3 persons)
For the pastry:
5 medium-sized red onions
A handful of fresh thyme (use only the leaves)
50 grams of butter
About 10 anchovy fillets
2 tablespoons of roughly chopped black olives
1 teaspoon of brown sugar
Olive oil
Balsamic vinegar
Freshly ground pepper
Fresh parmesan flakes
Spaghetti

How to make it

Cut the onions into halves and slice thinly.
Melt the butter in a sauté pan, add about 4 tablespoons of olive oil and throw in the onions. Mix it all around and add about 1 tablespoon of balsamic vinegar as well as the fresh thyme. Mix everything well and let it braise gently on a very low heat (with lid on) for about 30 minutes. Stir every now and then, so that the onion doesn’t burn, but will become soft, sweet and equally caramelized on all sides.


After 30 minutes, add the sugar, mix it in and let it braise for another 5 minutes. Then mix in the anchovy fillets. After about 5-10 minutes these will basically melt into the dish, adding an incredible flavor. Add the olives, season with freshly ground pepper (salt probably won’t be necessary, since the anchovies are pretty salty already).


Boil the spaghetti and you can either mix the onions in straight away or serve them on top. Sprinkle with fresh parmesan flakes just before serving.
