Quiche Again!

As I said before, I love quiche! It is the best choice if you have leftovers or some random ingredients in the fridge that you don’t really know what to do with. It is one of the simplest dishes you can make and good results are guaranteed.
Fresh out of the oven it makes a perfect dinner, but it is just as good eaten cold for lunch the next day, or even breakfast!

I usually do not make the pastry myself, but simply use puff pastry, which I make sure I always have in my freezer! Such a lifesaver at times…


U need (for 1 quiche – Ø 26 cm)
1 sheet of puff pastry (400 grams)
300 grams of boiled/steamed chicken/turkey fillets
300 grams of broccoli
Rosemary (about 5 stems)
200 grams of goat cheese
4 eggs
250 ml of cream
3 cloves of garlic (finely chopped)
Olive oil
Salt & pepper
How to make it
Preheat the oven to 180-200°C.
Grease a round quiche form (Ø 26 cm). Cover it with puff pastry and punch with a fork to allow the steam to get out during baking. Bake for about 10 minutes at 180-200°C.
In the meantime steam or boil the broccoli until soft and the chicken/turkey until done. Cut the broccoli and the meat up into pieces (about 3x3cm).
Take the pastry out of the oven and spread the vegetables and meat over it.
Whisk the eggs with the cream. Add the garlic and season with salt and pepper (as well as other spices if you like, dried paprika for example). Then pour this mixture over the vegetables. Put slices of goat cheese on top as well as the rosemary (the amount is up to you).
Bake in the oven for about 30 minutes.
