Christmas Cookies

Christmas cookies are the perfect way to celebrate the holiday season and are a family favorite they wait for all year long. And what better smell during the holiday season than that of freshly baked gingerbread cookies and a Christmas tree that has just been put up.
That is exactly what I did today – I baked the cookies, I decorated them and put up the Christmas tree. And there is nothing better to get into the holiday spirit.

I make these cookies every year. I decorate them and a part I hang in my Christmas tree and the rest I give out to my family. They’re always a big hit!
You can use anything for decoration – frosting, chocolate, sprinkles, m&m’s, etc. Just check out what your local supermarket has to offer and be creative! And buy some nice cookie cutters while you’re at it. Supermarkets are full of cookie-making accessories around this time of year, so you will find something for sure.

And don’t forget to make that little hole in the cookies before you bake them (using a straw for example), so that you can hang them up in your Christmas tree!

U need (for about 40 cookies)
2 tablespoons of butter
1/4 cup of honey
1/2 cup of caster sugar
1 egg
2 and 1/2 cups of all purpose flour
1 teaspoon of baking soda
4 tablespoons of mixed spice (the kind you use for gingerbread)
1 teaspoon of cocoa

How to make it

Preheat the oven to 180 °C.
Line a baking tray with a sheet of baking paper.

In a bowl combine all the ingredients until you obtain cookie dough. If it is too moist and sticks to your hands, add some more flour. Make a ball out of the dough and roll it out on a lightly floured surface to a thickness of about ¼-½ cm.
Cut out shapes with cookie cutters and place on the tray with the baking paper.

Gather the dough leftovers and make a ball out of them and repeat the process, until you have no more dough left.
Bake the cookies in the preheated oven for about 8 minutes. Wait until they cool down before you start decorating.
Keep them in an airtight container if you don’t want them to harden too much.
