Steak with Red Wine Sauce, Mashed Potatoes & Celeriac

I guess it is time for some festive recipes. Christmas is around the corner and I know that most mums/grandmothers (wifes, girlfriends, or dads, grandfathers, boyfriends, etc.) are already thinking what to serve their families for Christmas dinner. Over the coming weeks I will try to give you some ideas for delicious, nice-looking, but still fairly easy to cook possible Christmas foods.

This one in particular is one of my personal favorites, because I have made it for Christmas once before and it definitely had the “wow-effect”. Plus the red wine-sauce and the green garnish are just perfect color wise for this time of year! And it is really easy to make and does not require a lot of prep work.

U need (serves 4)
500 grams of potatoes, halved
500 grams of celeriac, diced
30 grams of butter
a dash of hot milk
1/4 teaspoon of freshly ground nutmeg
salt and freshly ground black pepper
4 juicy steaks of about 125 grams each
15 grams of butter
1 tablespoon of olive oil
2 glasses of red wine
3 tablespoons of jelly or jam made of red fruit
A handful of green parsley (or other green, fresh herbs) for garnish.

How to make it

Boil or steam the potatoes and the celeriac until soft. Drain and let it “rest” a little in the pan with the lid on. Mash the potatoes and celeriac thoroughly and stir in the butter and milk until combined. Stir in the nutmeg, and season with salt and pepper. Keep the puree warm until use (in a slightly heated oven, for example).
Season the meat with salt and pepper. Heat the butter and oil in a frying pan and fry the steaks for about 3 minutes on high heat on both sides (depending on how you like your steak). Remove the meat from the pan and keep it warm.
Pour the wine in the same frying pan and add the jelly/jam and let the sauce thicken a bit, stirring gently on low heat. Make sure to carefully mix in all the residue from frying the meat, even scrape it off the bottom of the pan – this will give the sauce most of its flavor!

Scoop a portion of the mashed potatoes and celeriac onto each plate, place the steak on top and spoon a generous amount of the sauce over and around it. Garnish with fresh herbs.
A crunchy, fresh and simple green salad would go really well with this dish.

Enjoy!
