Baked Ricotta
This one makes a great lunch, as it is probably too light for most people to pass for dinner.
If you have never tried baking ricotta before, this is your chance and I suggest you grab it, because it is truly a little piece of heaven on earth! Especially if you are a fan of the Italian cuisine, the herbs, spices and aromas.

Grilled Prawns with Soba Noodles & Zucchini
This one is a bit of a mix. An example of throwing together some ingredients I happened to have at home. It turned out quite good!
The main things that I will discuss here are the zucchini and the teriyaki sauce. I really don’t think I need to explain how to grill prawns or how to cook up some noodles (or do I?)

Baked Peas & Grilled Salmon
This is a fantastic recipe that is so quick and so simple and uses our reliable friends the frozen peas, which work really well here. Great with fish, meat, or even on a piece of nice ciabatta for lunch!

Broccoli Cream Soup
It’s time for broccoli – again! Did you know that the heaviest broccoli weighted over 35 lb? It was grown by John Evans in 1993. Anyway, soups are great!

Quiche with Broccoli, Spinach & Cashew Nuts
I love one pan dishes! Especially quiche. Quiche is one of the simplest dishes you can make and good results are nearly guaranteed.

Lemon Cupcakes
On weekends I always feel like baking. I recently bought these really cute cupcake/muffin cases, so I decided to make lemon cupcakes! Why lemon?
Baked Potato with Tuna-Ricotta Salad
Or as I like to call it – Spring Potato. I always make this dish as soon as I smell the spring in the air, which to me means that it is high time for lighter, fresh and more colorful food!

Pizza
There is like a million ways of making pizza. There is not a single correct method. And everybody will claim that their method is the best…
